
Protein Packed Carrot Cake
As someone who absolutely loves carrot cake, it’s always been one of my go-to desserts. However, over time, I realized that I wanted to make a version that was a little healthier, with more nutritional value to support my active lifestyle. After a bit of experimenting in the kitchen, I finally created a Protein Carrot Cake that gives me the best of both worlds: all the rich flavors I adore in a classic carrot cake, but with the added benefit of protein and cleaner ingredients. Carrot cake has always been one of my favorites, but I knew I could make it even better by swapping out some of the traditional ingredients for ones that are more nutritious and insulin-friendly. For instance, I use ProteinParlor Sweet Salted Toffee, which not only boosts the protein content but also adds a subtle sweetness without the need for extra sugar. Instead of refined flour, I use coconut flour to keep the carbs low and add a nice texture. And, of course, the shredded carrots provide vitamins, fiber, and that classic carrot cake flavor we all love. Plus, with the addition of walnuts, raisins, and shredded coconut, this cake is packed with healthy fats and fiber that help keep you full and satisfied.
The Recipe

Ingredients:
- 2 Scoops Protein Parlor Sweet Salted Toffee Protein Powder
- ¼ Cup Truvia (or sweetener of choice)
- 2 tsp Coconut Flour
- ¼ tsp Baking Soda
- Dash of Salt
- 1 ½ tsp Pumpkin Pie Spice
- ¾ Cup Shredded Carrots
- ¼ Cup Unsweetened Applesauce
- 2 tbsp Almond Butter
- 2 tbsp Egg Whites
- 2 tbsp Chopped Walnuts
- 2 tbsp Seedless Raisins
- 2 tbsp Shredded Coconut
Glaze:
- 6 oz Low-fat Cream Cheese
- 1 ScoopProtein Parlor Vanilla Bean Bliss Protein Powder
- ¼ tsp Vanilla Essence
Preparation:
- Preheat the oven to 325°F (165°C).
- In a bowl, whisk together the dry ingredients: Protein Parlor Sweet Salted Toffee Protein Powder, Truvia, coconut flour, baking soda, salt, and pumpkin pie spice.
- Finely grate the carrots and set them aside.
- In another bowl, combine the grated carrots with the wet ingredients: unsweetened applesauce, almond butter, egg whites, and mix until well combined.
- Add the dry ingredients to the wet ingredients and stir until everything is well incorporated.
- If the batter is too thick to spread, add 1-2 teaspoons of almond milk to adjust the consistency.
- Gently fold in the walnuts, raisins, and shredded coconut.
- Pour the batter into a greased baking pan and bake for 25-35 minutes, or until a toothpick inserted in the center comes out clean.
- Once the cake has cooled enough, prepare the glaze by mixing the low-fat cream cheese, Protein Parlor Vanilla Bliss Protein Powder, and vanilla essence together. Spread the glaze over the cooled carrot cake and enjoy!
